Ingredients:
- 1 pound medium raw shrimp - peeled, deveined, chopped into 1/2 inch pieces
- 2 Tbsp fresh orange juice
- 2/3 cup fresh lime juice, divided
- 4 cups Melon 1 watermelon, diced
- 1/3 cup minced red onion
- 2 Tbsp jalapeno, finely diced
- 1 cup loosely packed cilantro leaves chopped
- salt to taste
Directions:
- In a medium bowl, combine shrimp, orange juice, and 1/3 cup of lime juice. Cover and refrigerate at least 2 hours, or until shrimp are slightly pink and no longer translucent. NOTE: The acids in the fresh citrus juice will slowly cook the shrimp.
- In a large bowl, mix together the watermelon, red onion, jalapeсo pepper, remaining 1/3 cup lime juice. Add the shrimp and cilantro and gently fold together to combine the ingredients. Cover and refrigerate for 30 minutes.
- Service ceviche with your favorite tortilla chips. Enjoy!
