  • Protein: Feel free to swap the ground beef for a vegetarian option.
  • Bake: If the edges of your lasagna begin to brown before the center, line the edges with foil during the second bake as you would a pie.
  • Sliced Potatoes: Using a mandoline slicer is the preferred method for achieving thin, even slices of potato. We like this option. If you don't have a mandoline slicer, then carefully use a sharp knife to create very thin slices of potato.

Ingredients:
  • 1 Tbsp. extra virgin olive oil
  • 1 lb. ground beef (we used 85% lean ground beef)
  • 1 tsp. minced garlic or 1/2 tsp. garlic powder
  • 1/2 tsp. onion powder
  • 23 oz jar of marinara sauce
  • 1/2 tsp. Italian seasoning
  • 16 oz. (roughly two cups) ricotta
  • 1 egg
  • 2 cups shredded mozzarella
  • 2 Tbsp. fresh basil
  • 3 CarbSmart™ potatoes, thinly sliced (on a mandoline slicer)
  • 2 Tbsp. grated parmesan cheese
Directions:
  • Preheat oven to 350F and grease a 9x13 baking dish or casserole dish with cooking spray .
  • In a large pan over medium heat, cook ground beef until almost fully cooked. Add garlic, onion powder, Italian seasoning, and marinara sauce to the pan. Stir until ingredients are mixed together and warmed through. Remove from the heat and set aside.
  • In a medium bowl mix ricotta, egg, and fresh basil.
  • Layer in the greased baking dish:
    • marinara sauce
    • sliced CarbSmart™ potatoes
    • ricotta mixture
    • shredded mozzarella
    • repeat until the dish is filled and top the last layer with mozzarella cheese and grated parmesan
  • Bake covered with foil until heated through (around 30 minutes). Remove foil and bake uncovered for an additional 25 minutes until browned on top.
  • Remove from the oven and cool for 15 minutes before cutting and serving. Enjoy!
