Ingredients:

  • 5-6 Green Giant™ Fresh Vidalia® Sweet Onions
  • 1 package Buttery Roasted Garlic Minute Mashers™ (or roughly 2 cups mashed potatoes)
  • Olive oil or other cooking spray
  • 2 Tbsp. butter
  • 1/2 cup panko bread crumbs
  • 1/2 cup grated parmesan cheese + 1/3 cup grated parmesan cheese
  • 1 tsp. Italian seasoning
Directions:
  1. Preheat oven to 375 F.
  2. Carefully slice bottom (to create a flat surface) and top from each onion.
  3. Spray a 9x13 casserole dish with cooking spray and place each onion bottom-side down then cover with foil. Bake for 1 hour or until onions are knife-tender.
  4. While the onions bake, prepare the filling and break crumb topping.
  5. Add Minute Mashers™ mashed potato according to the package instructions and mash very well. Add mashed Minute Mashers™ to a bowl along with 1/3 cup grated parmesan cheese and mix to combine.
  6. In a skillet over medium heat, melt 2 Tbsp. butter then add bread crumbs. Stir and cook bread crumbs until they become golden. This happens very quickly so do not leave the stove unattended. Remove from the heat and add Italian seasoning and grated parmesan cheese. Mix well to melt cheese and combine ingredients. Break apart large chucks with a spatula as needed.
  7. Once onions have baked and are knife-tender, move to a cooling rack until they are cool enough to handle.
  8. Using a spoon, remove the inner layers of the onions while leaving at least 3-4 outer layers of the onion intact. Dice inner onion layers and add 1/2 cup to the mashed potato mixture.
  9. Increase oven temperature to 400F.
  10. Return outer onion layers to the casserole dish and fill with mashed potato mixture to the top. Bake for 10-15 minutes until heated through.
  11. Top warm onions with bread crumb mixture and return to the oven for an additional 3-5 minutes for an extra crispy bread crumb topping.
  12. Remove from the oven and allow to cool for 5-10 before serving. Enjoy!
