Watermelon & Shrimp Ceviche Recipe

Ingredients:

  • 1 pound medium raw shrimp - peeled, deveined, chopped into 1/2 inch pieces
  • 2 Tbsp fresh orange juice
  • 2/3 cup fresh lime juice, divided
  • 4 cups Melon 1 watermelon, diced
  • 1/3 cup minced red onion
  • 2 Tbsp jalapeno, finely diced
  • 1 cup loosely packed cilantro leaves chopped
  • salt to taste

Directions:

  1. In a medium bowl, combine shrimp, orange juice, and 1/3 cup of lime juice. Cover and refrigerate at least 2 hours, or until shrimp are slightly pink and no longer translucent. NOTE: The acids in the fresh citrus juice will slowly cook the shrimp.
  2. In a large bowl, mix together the watermelon, red onion, jalapeсo pepper, remaining 1/3 cup lime juice. Add the shrimp and cilantro and gently fold together to combine the ingredients. Cover and refrigerate for 30 minutes.
  3. Service ceviche with your favorite tortilla chips. Enjoy!
