CarbSmart™ Potato & Herb-Roasted Chicken Skillet

Ingredients:

  • 1 lb CarbSmart™ potatoes, cut into 1-inch cubes
  • 6 bone-in, skin-on chicken thighs
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 tsp paprika
  • Salt and pepper, to taste
  • 1 lemon, sliced
  • 1 cup chicken broth

Instructions:

  1. Preheat the oven to 400°F.
  2. Heat olive oil and butter in a large oven-safe skillet over medium heat.
  3. Season chicken thighs with paprika, salt, and pepper, then sear them skin-side down until golden brown. Flip and sear other side until golden brown. Remove from the skillet and set aside.
  4. In the same skillet, sautй onions and garlic until fragrant, then add CarbSmart™ potatoes, rosemary, thyme. Stir to combine and coat potatoes in the seasonings.
  5. Place the seared chicken thighs on top of the potatoes. Add chicken broth and tuck lemon slices in between chicken thighs.
  6. Cover with fiol and transfer the skillet to the oven and roast for 30 minutes, or until the chicken reaches an internal temperature of 165°F and the potatoes are tender. Uncover chicken and roast for 10 more minutes.
  7. Serve hot and garnish with additional herbs if desired. Enjoy!
