CarbSmart™ Potato & Herb-Roasted Chicken Skillet Recipe
CarbSmart™ Potato & Herb-Roasted Chicken Skillet
Ingredients:
- 1 lb CarbSmart™ potatoes, cut into 1-inch cubes
- 6 bone-in, skin-on chicken thighs
- 1 tbsp olive oil
- 1 tbsp butter
- 1 medium onion, diced
- 3 garlic cloves, minced
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- 1 tsp paprika
- Salt and pepper, to taste
- 1 lemon, sliced
- 1 cup chicken broth
Instructions:
- Preheat the oven to 400°F.
- Heat olive oil and butter in a large oven-safe skillet over medium heat.
- Season chicken thighs with paprika, salt, and pepper, then sear them skin-side down until golden brown. Flip and sear other side until golden brown. Remove from the skillet and set aside.
- In the same skillet, sautй onions and garlic until fragrant, then add CarbSmart™ potatoes, rosemary, thyme. Stir to combine and coat potatoes in the seasonings.
- Place the seared chicken thighs on top of the potatoes. Add chicken broth and tuck lemon slices in between chicken thighs.
- Cover with fiol and transfer the skillet to the oven and roast for 30 minutes, or until the chicken reaches an internal temperature of 165°F and the potatoes are tender. Uncover chicken and roast for 10 more minutes.
- Serve hot and garnish with additional herbs if desired. Enjoy!
