Vidalia® Sweet Onion & Mango Salsa with Baked Tortilla Chips

Vidalia® Sweet Onion & Mango Salsa Ingredients:

  • 1 Green Giant™ Fresh Vidalia® Sweet Onion, finely diced (about 1 cup)
  • 2 ripe mangoes, peeled, pitted, and diced (or substitute 1 cup of thawed frozen mango)
  • 1 cup fresh cilantro, chopped
  • 1-2 jalapeno, seeded, finely diced
  • juice of 1 fresh lime
  • salt to taste
Tortilla Chip Ingredients:
  • 10 small corn tortillas
  • avocado oil spray or your preferred cooking spray
  • 1 tsp salt
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
Directions:
  1. In a large bowl, mix the Vidalia® Sweet Onion, mangoes, and jalapenos. Add the chopped cilantro, lime juice, and salt. Mix well. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together.
  2. While the salsa chills, preheat your oven to 350F. Stack the corn tortillas and cut them into 6 wedges each to create chip-sized pieces. Arrange the tortilla wedges in a single layer on a baking sheet and spray with avocado oil (or your preferred cooking spray). If needed, use more than one baking sheet to avoid overlapping.
  3. In a small bowl, combine the salt, ground cumin, and chili powder. Sprinkle the seasoning mixture evenly over the tortilla wedges. Bake in the preheated oven for 10-15 minutes, or until the chips are golden brown and crispy. Check chips every few minutes to prevent burning.
