Three words to warm you up during these colder month: Zesty Potato Casserole! This super flavorful and spicy casserole is the perfect weeknight recipe to whip up during the winter.

Ingredients – with One Step...Done!™ Potatoes:

  • 2 packages Roasted Red Pepper One Step…Done!™ potatoes, cut in half
  • 1/2 lb. bacon
  • 1 can (14.5oz) diced tomatoes with chilies, drained
  • 3 C. shredded cheese
  • 4 green onions, chopped
  • 1/3 C. chopped green bell pepper
  • 1/3 C. chopped red bell pepper
  • 1 1/2 C. mayonnaise
  • 2 Tbsp. fresh squeezed lime juice
  • 1 tsp. seasoned salt
  • 1/4 tsp. fresh ground pepper
  • 1 1/2 tsp. chili powder
  • 2 tbsp. fresh cilantro, chopped

Directions – with One Step...Done!™ Potatoes:

  1. Microwave One Step…Done!™ Potatoes according to package instructions. Set aside to cool. When potatoes are cool enough to handle, slice each potato in half.
  2. Sautй bacon over medium heat until cooked and crispy. Remove bacon and drain on paper towel. Add onions, and green and red pepper to bacon drippings, cook until nice and soft.
  3. In a large bowl, place potatoes, tomatoes, cheese, onions, and peppers.
  4. In a smaller bowl, whisk mayonnaise, lime juice, seasoned salt, pepper, and chili powder. Add to potatoes and stir to coat. Pour into a greased 9Ч13 pan.
  5. Chop bacon, sprinkle over top.
  6. Bake uncovered at 350°F for 30 minutes or until casserole is heated. Sprinkle with cilantro. Let stand 5 minutes before serving.

  • 2 1/2 lbs. Klondike Goldust® potatoes cut into 1 inch cubes
  • 1/2 lb. bacon
  • 1 can (14.5oz) diced tomatoes with chilies, drained
  • 3 C. shredded cheese
  • 4 green onions, chopped
  • 1/3 C. chopped green bell pepper
  • 1/3 C. chopped red bell pepper
  • 1 1/2 C. mayonnaise
  • 2 Tbsp. fresh squeezed lime juice
  • 1 tsp. seasoned salt
  • 1/4 tsp. fresh ground pepper
  • 1 1/2 tsp. chili powder

  1. I know bell peppers are good for you – but I can’t handle them. I always have to omit them from any recipe.

  4. A simple, straight forward recipe that is so delish simply because those little Farm Star Living bags are SUPENDOUS ! They easily can and DO stand alone to just eat out of the bag !

  5. This will sound nuts to some, but two of us in the family do not like bacon at all, so we used Italian sausage one time, and smoked beef sausage cubed into mini mini pieces instead, and everyone enjoyed it very much.

  6. I do love an old standby. I also like the bacon added. I’d perhaps just make it half and half for those fussy kids. You never know .
