This recipe is SO easy but here's a few tips and tricks to creating the best Roasted Honey Mustard Chicken & Potatoes:

  • Bake Time: This will depend on the type and the thickness of the chicken you use. Your best bet is to use a meat thermometer to ensure chicken is fully cooked.

  • Protein: We opt for bone-in chicken thighs with the skin for added flavor but you can use boneless skinless breasts or another cut of meat if that's what you prefer! Adjust cooking time as needed.

  • Honey Mustard: This glaze should be thick enough to stick to the chicken but still pourable. You may need to add a couple tablespoons of warm water to create the right consistency. For even more protein, add a dollop of full fat greek yogurt.

Ingredients:

  • 5 bone-in chicken thighs with the skin or chicken of your choice

  • 3 cups Green Giantâ„¢ Fresh CarbSmartâ„¢ potatoes, cubed

  • 1 cup Green Giantâ„¢ Fresh yellow onions, sliced

  • 5 cloves garlic

  • 4 sprigs fresh thyme

  • 1 cup honey

  • 2 Tbsp dijon mustard

  • 3 Tbsp grainy mustard

  • 1 Tbsp fresh thyme, removed from the stems

  • 1/2 tsp garlic powder

  • 3 Tbsp extra virgin olive oil

Directions:

  1. Pre heat your oven to 400F.

  2. Add cubed Green Giantâ„¢ Fresh potatoes and onions to a deep casserole dish that's large enough to fit potatoes and chicken thighs. Drizzle with 1 Tbsp olive oil, season with salt and pepper, and cover with aluminum foil. Bake covered for 30 minutes.

  3. While the potatoes and onions cook, trim the fat from the chicken thighs and pat dry.

  4. Make the honey mustard glaze by adding dijon mustard, grainy mustard, fresh thyme, garlic powder, and extra virgin olive oil to a jar with a tight fitting lid. Shake to mix and combine ingredients well. If the sauce is too thick to pour, add a little warm water 1 Tbsp at a time until you reach a pourable consistency.

  5. Remove casserole dish from the oven and add 4 sprigs of thyme along with 5 cloves of garlic and mix. Nestle chicken thighs on top of potatoes and onions. Season with salt and pepper. Drizzle with honey mustard glaze.

  6. Return to the oven and bake uncovered for 45 minutes or until the internal temperature of the chicken has reached 165F. Remove from the oven and serve. Enjoy!

  2. I use minced garlic from a jar. It’s easier (1 level tsp. equals one clove) spreads more evenly, and is easier to eat. I want to try this!

  3. Second favorite dish in these recipes , I like to use smaller chicken breast in mine , absolutely delicious

  4. We’re not big fans of Dijon mustard,im sure I could eliminate or exchange it for something else cause besides that yummy.
