CarbSmart™ Potato & Creamy Chicken Casserole

Ingredients:

  • 4 cups CarbSmart™ Potatoes, diced
  • 1 Tbsp. olive oil
  • 3 cups cooked, shredded chicken (rotisserie chicken works great)
  • 10.5oz can cream of chicken soup
  • 1/4 cup sour cream
  • 1 cup frozen peas and carrots
  • 1 tsp garlic powder
  • 1 cup shredded mozzarella cheese
  • salt and pepper to taste

Instructions:

  1. Preheat the oven to 375F.
  2. Add diced potatoes, olive oil, salt and pepper to a casserole dish and mix to coat potatoes. Cover the casserole dish with foil and bake for 20 minutes.
  3. In a large mixing bowl, combine the shredded chicken, cream of chicken soup, sour cream, peas and carrots, mozzarella cheese salt and pepper. Mix to combine ingredients.
  4. Remove potatoes from the oven and carefully transfer the chicken and vegetable mixture to the casserole dish. Mix all ingredients together in the casserole dish.
  5. Bake for 25-30 minutes, until the cheese is melted and casserole is golden brown. Enjoy!
