Mediterranean Smashed CarbSmart™ Potato Salad
Potato Salad Ingredients:
- 8 cups CarbSmart™ Potatoes, 1-inch cubes
- 2 Tbsp olive oil
- 1 tsp dried dill
- 1/2 cup spring onions, finely chopped
- 4 Persian cucumbers, chopped into half-moons
- 1/2 cup Kalamata olives, sliced
- 2 Tbsp fresh dill, roughly chopped
- 8 oz Feta cheese, cubed
Dressing Ingredients:
- 2 Tbsp tahini
- 1 Tbsp olive oil
- 1 Tbsp lemon juice
- 1 tsp Dijon mustard
- 1 clove garlic, minced
- 3 tbsp water
- Pinch of smoked paprika
Instructions:
- Preheat oven to 425F. Add cubed potatoes to a large pot and fill with cold water. Bring to a boil and drain potatoes when they are just fork-tender. Be sure to not over boil the potatoes or they will become too soft.
- Place potatoes on a parchment paper lined baking sheet and drizzle with olive oil. Season with dried dill and smash potatoes with the bottom of a glass. TIP: place potatoes on the baking sheet skin-side up and spray the bottom of the glass with cooking spray. Bake for 25 minutes or until potatoes are crispy.
- While potatoes bake, add all dressing ingredients to a bowl and mix to combine. Taste and season with salt and pepper. If the dressing is too thick, thin with 1 Tbsp of warm water and stir. Keep adding water until you've reached a pourable consistency.
- Add the spring onions, cucumbers, olives, and crispy potatoes to a large bowl. Pour the dressing over the ingredients and toss to coat well. Garnish with fresh dill.
