Minute Mashers™ Shepherd's Pie Soup Recipe
Ingredients:
- 1 lb ground beef
- 1 cup onion, diced
- 2 cloves garlic, minced
- 1 cup carrots, diced
- 1 cup celery, diced
- 4 cups beef or vegetable broth
- 2 cups frozen peas
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 package Buttery Salt & Pepper Minute Mashers™
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
- In a large pot over medium heat, add the ground beef. Cook until browned, breaking it apart with a spoon. Drain excess fat if necessary.
- Add the diced onion, garlic, carrots, and celery to the pot. Sautй for about 5-7 minutes until the vegetables are softened.
- Stir in the broth, frozen peas, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes.
- While the soup is simmering, prepare the Minute Mashers™ according to the package instructions. Remove from the microwave with an oven mitt, and mash very well.
- Ladle the shepherd's pie soup into bowls and top with generous scoops of the Minute Mashers™ mashed potatoes. Garnish with fresh parsley.
