CarbSmart™ Potato & Bacon Breakfast Casserole Recipe
CarbSmart™ Potato & Bacon Breakfast Casserole
Ingredients:
- 4 cups Green Giant™ Fresh CarbSmart™ Potatoes, diced
- 1 cup onion, diced
- 1 cup bell pepper, diced
- 1 Tbsp. extra virgin olive oil
- 1 cup cooked bacon, diced
- 6 eggs, whisked
- 1/2 cup milk1 cup shredded cheddar cheese
- 1/4 cup green onions, chopped
- Salt and pepper to taste
Instructions:
- Preheat the oven to 400F
- Add diced CarbSmart™ potatoes, diced onions, and diced bell pepper to a 9x13 casserole dish. Drizzle with extra virgin olive oil and season with salt and pepper. Mix to combine and cover with foil. Bake for 20 minutes.
- While the potatoes and vegetables bake, whisk together the eggs, milk, salt, and pepper in a large mixing bowl. Add the diced bacon, and shredded cheese to the egg mixture and mix again to combine.
- Carefully remove the casserole dish from the oven and pour the egg mixture over the potato-veggie mixture. Be sure ingredients are evenly dispersed.
- Bake uncovered for 30-35 minutes, until the eggs are set and the cheese is melted.
- Garnish with green onions. Enjoy!
