Healthier Vidalia® Sweet Onion Dip Recipe
Ingredients:
- 1 Green Giant™ Fresh Vidalia® Sweet Onion, finely chopped (about 2 cups)
- 1 cup cottage cheese
- 1 cup plain Greek yogurt
- 1 tablespoon olive oil
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon dried dill
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh chives or parsley, chopped
Instructions:
- Heat the olive oil in a medium skillet over medium heat. Add the finely chopped Vidalia® sweet onion and cook, stirring occasionally, until the onions are soft and caramelized, about 15-20 minutes. Reduce heat if onions begin to brown too quickly. Add the garlic powder and cook for another 1-2 minutes, until fragrant. Remove from heat and let cool slightly.
- In a blender or food processor, blend the cottage cheese until smooth and creamy. In a large bowl, combine the blended cottage cheese and Greek yogurt. Mix until well combined. Stir in the caramelized onions along with the onion powder, garlic powder, dried dill, smoked paprika, salt, and pepper. Mix until all ingredients are well incorporated. Taste and adjust seasoning if necessary.
- Cover the dip and refrigerate for at least 1 hour to allow the flavors to meld together.
- Before serving, garnish with fresh chopped chives or parsley.Serve with fresh vegetables like carrots, cucumbers, and celery, whole grain crackers, baked chips, or crusty bread.
